Spongecake. I think. It's very tasty, but the texture isn't as smooth as a regular cake. I don't think it would work very well with frosting, but suspect it would be fantastic with a glaze of some sort (lemon or pineapple, in particular) or perhaps just with some berries on it or both.

For method, I looked over all the suggestions and ended up doing it this way:

Cream butter and sugar then add the eggs until well blended. Combine dry ingredients (I didn't sift them, but I did grab a whisk and mix them together that way) and in a separate bowl combine milk and vanilla. Alternate adding the dry ingredients and the milk mixture into the butter/sugar mixture until blended.

I greased a 9x13 pan and baked it in that... next time I'll grease and flour the pan, since the finished cake is sticking quite a bit. Baking time ended up being 35 minutes (I started checking at 30) at 350F.

I also cut the recipe in half... the full recipe definitely would have fed a LOT of people.

And here's the finished product... straight out of the oven!

And a piece, sitting on a plate (I probably cut into it a bit too soon, too... but I was impatient to see how it tasted).

Final verdict: I would definitely make this one again!
