Almost done...

March 15th: Dairy-Free Oatmeal Chocolate Chip Cookies

I've been trying to get a bit better about actually cooking again lately... hopefully, no one will get too sick of seeing food photos! Being allergic to milk, I have to use dairy substitutes when I cook... and until now, all the butter substitutes I'd tried had ended producing soft cookies. Unfortunately, I'm a crispy cookie kinda person. After a bit of research, I finally picked up some Spectrum vegan shortening, made with palm fruit oil. Bingo! The stuff has a very similar melting point to butter... and yep, made nice crispy cookies! And, even better, I managed to get them into the freezer without eating them all!



March 16th: Visiting Cat

Pulled up to the house in the afternoon to discover that we had a visitor. One of the neighbor cats was happily hanging out on the trellis on the front of the house. It just struck me funny, so I snapped a photo.



March 17th: Corned Beef

It's traditional... so we had corned beef, although not with traditional cabbage. I'm not a big fan of cooked cabbage, so I always make my favorite coleslaw. The potatoes are actually gestampte pot, a Dutch dish similar to colcannon (in this case, it was made with potatoes, parsnips, carrots and garlic). When I went shopping for horseradish, I was a bit flummoxed to discover that all the brands I could find had high fructose corn syrup... we wouldn't have had horseradish sauce at all, except on the way to the checkout I spotted some on a Passover display and, sure enough, no HFCS!! Very tasty stuff!



March 18th: Carnation Cow

I headed out to the Snoqualmie Valley again, this time going for a Geocache on the west side of the valley located out near Camp Korey, a camp set up for children with serious medical conditions and life-threatening illnesses. It's located on the historic Carnation Farms, the 100+ year old farm that was the research farm for Carnation Milk. Here's the statue of Possum Sweetheart, who captured the record for milk production in 1920 and helped prove that Carnation farms' experimental "contented cows" project was a success.

This was another one of those times when I got to see some really cool things that I never would have known about if there hadn't been a nearby Geocache.



And a bonus photo with another view of Snoqualmie Valley, looking out across the old pastures and toward one of the other farm buildings in the distance.



Edited because I realized the cookies weren't actually vegan, just dairy free.
