Earlier this week, I made one of my favorite Weight Watcher's recipes (one I found at the WW UK site), Salmon and Leek Pie with Rosti Topping (if you decide to try this one, you need to wiggle the ingredients around a bit... the Points values come out a bit differently in the US), only this time with goat milk! It turned out REALLY well.

We got a rather large package delivered this week, so of course the cats had to hang out in the spiffy new cardboard box!

rackham had been holding Numfar when she decided his shoulders looked more inviting. He finally extracted her when she tried to perch on top of his head.

We got a bit of a late start on Saturday, but managed to spend the afternoon hiking the Iron Goat Trail before the rain swept in. Our one year anniversary of Geocaching is next weekend and this was the trail where we found our first Geocache, so we thought it was essential to get back up there this week. It's an old converted railway that used to switchback up the mountain before the big tunnel was completed. The wall is part of the old snowshed... it's HUGE and seems to stretch forever (and it's only one of many).

Here's some of the upper Iron Goat Trail... it can get quite narrow and wanders through some boulder fields and over streams. The mileage marker shows the distance from Chicago on the old rail line.

On the way back up Highway 2 from Iron Goat Trail, we stopped off at a roadside attraction: Sasquatch!! The sign you can barely see off on the right mentions the fact that this spot was used to film a scene from the movie "Harry and the Hendersons."

And, finally, tonight's sunset from our back deck. Considering the day started out completely overcast and pouring rain, it was a nice surprise to see such a stunning sight this evening!

BTW, I'm going to try to remember to crosspost my LJ entries here. I know, I can set it up to be automatic, but I'm probably going to hold out on that for a bit.

I suspect, eventually, I'll switch over to posting here first and having the posts exported to LJ, simply because it's a bit cleaner that way and will also let people over there known when I have replies here. As it is, I'm winding up sort of having two completely different sets of conversations on the same subject!
I also still need to upload more icons here!
