Jerusalem Artichokes (aka Sunchokes)

taradaktyl has had a bumper crop this year and gifted me with a huge bag of them. I'm planning on planting some of the smaller ones, but wanted to try cooking a few of them, as well. I'm rather curious about what they taste like.

So, people on my flist... has anyone ever cooked Jerusalem Artichokes before? And if so, do you have any favorite recipes you'd be willing to share?
