More yummy "diet" food
I mentioned on
treacle_a's LJ that I would post my recipe for Chocolate Chocolate Chip Brownie Bites. They're essentially the recipe for Chocolate Chocolate Chip Cookies with a slight variation that came about when I realized the only butter in the house was in the freezer... and in the process of trying to thaw it in the microwave, I overshot and it melted a bit, which led to a much more batter-like consistency.
Anyway, here they are:
Chocolate Chip Brownie Bites
POINTS Value: 1
Servings: 40 or more
Ingredients
1 cup all-purpose flour
1/4 tsp baking soda
1/8 tsp table salt
1/4 cup butter, partly melted
1/2 cup dark brown sugar, packed
1/2 cup sugar
1/3 cup unsweetened cocoa (get some GOOD unsweetened cocoa, it makes a difference)
2 large egg white(s)
1/3 cup semi-sweet chocolate chips, miniature
1 sprays cooking spray (if your muffin tin is not non-stick)
Instructions
Preheat oven to 350°F.
Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, baking soda and salt in a large bowl.
In another bowl, beat butter and brown sugar with a mixer at medium speed until thoroughly blended; gradually add granulated sugar, beating well. Add cocoa and egg whites, beating well. Gradually add flour mixture, beating until blended. Stir in chocolate minichips.
Using a 2 tsp disher (AKA #60), scoop batter (without quite filling the scoop) into a non-stick mini-muffin tin (and I'm talking the *tiny* one). Bake at 350°F for 10 minutes. Let cool in pan for 2 minutes, then turn out onto a cooling rack.
Yield: 40 or more cookies (serving size: 1 Brownie Bite).
It makes wonderfully chewy brownie bites, although if you're still having some willpower problems, they may not be the best thing to keep around the house. I still haven't tried freezing them, so I have no idea how well they'll hold up (
rackham likes them too, so they haven't been sticking around long enough to go bad). I really like the idea of using mini chocolate chips in things though... you can use considerably fewer and still get a nice even distribution of chocolaty goodness (I'm probably going to try tossing some in with my fairly low point banana-oatmeal muffins, the next time I make them).
