I guess it's the addition of the words "for sixty people" after the word "dinner" that really did me in.

But it's over! It's done!! It went REALLY well, we didn't run out of food, everyone had a great time and I don't even need to begin to think about doing anything like it again for another year. Yay!

This year's dinner was brought to us almost entirely by CostCo... we got some of their premade lasagnas and distributed them to various people for cooking. CostCo actually has some pretty darned good cakes, and I even picked up some appetizers, as well as a veggie tray and some salad mix and many, many loaves of bread.

The only thing made from scratch is what I threw together earlier this evening: lasagna made with brown rice noodles, free range ground turkey and goat's milk feta (plus other standard lasagna ingredients). We have a few people with dietary restrictions and that pretty much covered them all (including two women who were very surprised we'd thought to cook something without gluten -- they'd been expecting to just eat salad). The only problem now is that they all want the recipe... and I really did just throw it together. Coming up with measurements could be tricky.

Anyway, it's been a long couple of days and hopefully I haven't missed anything really important out there in LJ-land, but I'm heading to bed for a long night's sleep.

Mom's taken to Costco for group dinners whenever possible. It was pretty funny when the whole garden club wanted her chicken enchilada recipe and she had to tell them it was Mr. Costco's.

Congratulations! It must have been quite daunting facing the prospect of 60 diners. And very major congrats. on managing a gluten, dairy, red-meat free version as well - clever Fen!

At least my wife only had the church valentine dinner signed up for... that was for 80 and frankly, I don't see how she gets any joy from catering... Enjoy your rest, I know you need it after all that!
