I got to do one of my favorite things this evening... take leftovers, combine them with other ingredients I have on hand and make an entirely new dish! In this case, the leftover stuff in question was just a bit over a serving of the spaghetti sauce I made the other day. I'd considered having it for lunch and had even gone to boil some noodles to go with it... when I remembered that we had gotten a spaghetti squash with our produce delivery this week! Coolness! But that would make more "noodles" than I needed and they don't really keep all that well. I eyed the sauce to see if maybe it could be enough for both of us for dinner later, maybe if I picked up some crusty bread to go with it and maybe if we had a salad... or I could add a bit of stuff to the existing sauce to extend it a bit. Then I remembered seeing some recipes for making a casserole of sorts with spaghetti squash.

I did a bit of checking around online, found a few recipes similar to the ingredients I had on hand and then just winged it. In the end, I cooked up some more onions, bell pepper and mushrooms... chopped up a few tomatoes to toss in and added some kale because we had it in the fridge and it needed to be used, then mixed in the leftover spaghetti sauce. Earlier, I'd cut the spaghetti squash in half and had baked it... so when everything else was cooked, I added the shredded spaghetti squash to the pan and stirred it in with the other ingredients. Then I dumped the whole thing into a small casserole, topped it with some freshly shredded Pecorino Romano and stuck it in the oven for 15 minutes.

Oh my gosh, you guys, it turned out so well! I'm definitely going to have to keep this technique in mind for future spaghetti sauce leftovers. Even better, it turned a single serving into four servings... so now we have leftovers of our leftovers!
